Pear Wine

2¼ Kg (5 lb) Pears very ripe.
1¼ Kg (3 lb) Sugar granulated
2 Lemons
4.546 Litres (1 gallon ) water
30 gms (1 oz) dried yeast  A general wine yeast for this one.
Yeast  nutrient  Use in accordance with the instructions on the packet.

Chop the pears, do not core or peel them, and be sure to save any juice. Place into a large saucepan, add the water and any juice obtained from chopping.
Bring to the boil slowly and simmer gently for no more than 15 to 20 minutes. Any longer and the wine will be difficult to clear later. Strain onto the sugar,  add the juice of  two lemons and yeast nutrient.  Allow to cool to 21° C  and pour into a demijohn. Add the yeast and fit airlock
Allow to ferment to a finish. Syphon off through a wine filter and bottle.

I have not made this wine  But I understand it can be difficult.
