Walnut Leaf Wine

4½  litres (1 gallon) of freshly picked Walnut leaves. Pick in June.
1½ kilos (3½ lb) sugar. Granulated.
2 Lemons
4½ litres (1 gallon) Water
30 gms (1oz) dried yeast.
1 level teaspoon yeast nutrient.

Dissolve the sugar in 6 pints of boiling  water and pour over the leaves. Allow to stand overnight and strain into a demijohn.
Add the juice of two lemons, yeast and yeast  nutrient and shake well. Add the remainder of the cold water ( maintaining a temperature of  21° C) , insert bung and airlock and ferment to a finish.
When  fermentation has finished syphon through a wine filter into another demijohn and allow to stand for 2 months before bottling.

I have not tried this recipe and would like to receive comments from anyone who tries it.
