Apple Wine

3kg (6lb) Apples. Windfalls are ok for this recipe
1.360 kg (3 lb) of sugar. Granulated.
4.546 Litres (1 gallon) of boiling water.
1 lemon
250gms (8oz) Raisins. (Chopped)
30 gms (1 oz) dried yeast.

Wash and cut up all the apples including skin and brown patches. Boil for 10 to 15 minutes in the water. Strain onto the Sugar and thinly peeled rind of the lemon. Stir well and leave to cool  to 21°C . Add the juice of the lemon and the yeast, cover and leave in a warm place for 24 hours. After 24 hours pour into a demijohn fit bung and airlock. Leave to ferment in a warm place for 4 weeks. After 4 weeks syphon off into a second demijohn, add the chopped raisins insert a plain cork into the demijohn and allow to mature for 6 months. After 6 months syphon through a filter and bottle.
